We're going to use postfix in this example, as it's a service that won't be doing much of anything on our VM.

postfix is a Mail Transport Agent ( MTA) typically installed on CentOS boxes. Even if your box isn't handling email, processes might use it to email you warning about failures and things of that ilk.
