低油温
即是三四成热,其温度在90℃~120℃,直观特征为无青烟,油面平静,当浸滑食材时,食材周围无明显气泡生成。

即是五六成热,油温在150℃~180℃,直观特征为油面有少许青烟生成,油从四周向锅的中间徐徐翻动,浸炸食材时食材周围出现少量气泡。

高油温
为七八成热,其油温在200℃~240℃,直观特征为油面有青烟升起,油从中间往上翻动,用手勺搅动时有响声,浸炸食材时食材周围出现大量气泡翻滚,并伴有爆裂声。
